Sweet Potato Pudding by: Mary Ann Frazier

  • 3 good sized sweet potatoes, roasted
  • 2 eggs
  • 1 can evaporated milk
  • 1 large can crushed pineapple, in it’s own juice
  • 1 teaspoon cinnamon
  • 1⁄2 teaspoon nutmeg
  • 1 teaspoon vanilla
  • 1⁄2 - 1 cup dried cherries

Mix all ingredients, except the pineapple and cherries, with an immersion blender until well mixed.

Fold in pineapple and cherries.

Place in a 13X9 inch greased baking dish.

Bake at 350 degrees until the center is firm.

You can top with marshmallow and brown.
