Ingredients:

• 1 small onion, chopped fine

• 1 (16 oz) bag frozen petite peas

• 2 (8 oz) pkgs Swiss cheese slices, chopped to about the size of the peas

• 2-3 Tbsp mayonnaise-just enough to moisten other ingredients

• 2-3 head lettuce (enough to fill a large bowl 32 oz)

• 1 lb bacon

Directions:

The night before, mix together onion, peas, Swiss cheese, mayonnaise, and lemon juice. Refrigerate overnight.

Next day: shred lettuce (I use a mix of green leaf, iceberg, and butter lettuces).

Fry or bake the bacon. I bake it at 400 degrees for 10-15 minutes (you’ve got to watch it). Right before serving, mix the lettuce with the pea mixture and the bacon.
